Dolia Vacua is synonymous with commitment, effort and demand.
Our vinegars differ from most in their method of production and maturation. More than 150 years ago, the German chemist Schützenbach designed a method to extract the best characteristics from the wine during the process of conversion to vinegar, which is the main reason why Dolia Vacua obtains vinegars of the highest quality
If we add to all this 4 years of maturation in French oak wood, we obtain the perfect vinegar.
We have one white wine vinegar on the vine. This type of vinegar is characterised by its turbidity, as it is bottled directly without the clarification/filtration processes. As a result, we obtain a vinegar with all the aromas and flavours extracted from the wine, in our case the Airen variety. It could be said that it is the purest vinegar that exists, this being its main quality.
Another of our vinegars is the reserve vinegarIt is produced by the same method, but with the clarification/filtration process. Aged in French oak barrels for 4 years to absorb the best aromas and flavours of a vinegar.
As Dolia Vacua's flagship product, we have our balsamic vinegar reserva 4 years.It is undoubtedly the one that best accompanies our Mediterranean diet in various aspects, from salads to sauces and dressings.
As an adaptation to the new food trends and the growing concern for the environment, the production of organic vinegars is booming. They have the same qualities as conventional vinegars but are actually a more eco-friendly product.
In this product range we have two types of wine vinegar; white wine vinegar (en rama) y balsamic vinegarboth produced in a similar way to the conventional but using wines from organic crops. And a organic apple cider vinegar. It is extracted by pressing ripe organic apples. This juice is fermented naturally to produce cider, from which this vinegar is obtained.
Our organic vinegars are produced and handled in compliance with EU organic standards and certificates.
