White and red wine vinegars
All our vinegars are made from La Mancha wines. Mainly from Airén and Tempranillo varieties.
The elaboration process used has been the NATURAL METHOD by means of slow fermentation in superficial cultivation.
This process is also called the Schützenbach or German method. The vinegar obtained by this method is characterized by the aroma and the singular taste provided by the slowness of the acetification process, which is favoured by the simultaneous aging, and the continuous contact with oak wood chips.
Reserve Vinegar
Vinegar made from wines from La Mancha. Mainly from the Airén variety. The production process used is the NATURAL METHOD by means of slow fermentation in surface culture. The vinegar obtained is left to rest for 4 years in our French oak barrels. Time and wood make this vinegar acquire the characteristics of aged vinegars, with a touch of wood.
Balsamic Vinegar
